One of the things we’ve come to love about living in Finland is how generous and kind our neighbours are. Recently, our lovely Finnish neighbour gave us a basket of freshly picked chanterelle mushrooms that she had gathered from the nearby forest.
Since it was our very first time cooking chanterelles, she also taught us the traditional Finnish way to prepare them.
Her instructions were surprisingly simple and easy to follow, even for complete beginners like us.
The recipe requires only a few ingredients, allowing the mushrooms’ natural flavour to shine. We were honestly amazed at how delicious they turned out!
My husband and I had never tasted chanterelle mushrooms before, and we both loved them. They were buttery, earthy, and incredibly flavourful.
Our little one even had a few bites without realizing they were mushrooms! She’s currently in her toddler picky-eating phase, so getting her to try vegetables can be a challenge. We’re still introducing her to different vegetables and new foods little by little, and we’re happy she gave these chanterelles a chance.
If you’re lucky enough to get your hands on fresh chanterelles, here’s the simple Finnish-style method our neighbour shared with us.
How to Cook Chanterelle Mushrooms (Dry Sauté Method)
- Heat the Pan. Place a large skillet or frying pan over medium-high heat. Do not add butter or oil yet.
- Dry Sauté the Mushrooms. Add the cleaned chanterelle mushrooms to the dry pan. Cook for 3–5 minutes, stirring occasionally, as they release their natural moisture.
- Let the Moisture Evaporate. Continue cooking until all the liquid has evaporated and the pan is dry. This usually takes 5 to 10 minutes.
- Add Butter or Oil. Reduce the heat to medium. Add 1 to 2 tablespoons of butter, then season with salt and black pepper.
- Sauté Until Golden. Cook for another 3 to 5 minutes, stirring occasionally, until the chanterelles are beautifully golden brown and slightly crispy around the edges.
And there you go.. deliciously sauteed chanterelle mushrooms!
