If you’re anything like me, you’ve probably looked at a bunch of overripe bananas sitting on the counter and thought, “What am I going to do with these?” 😅
Well, instead of throwing them away, why not turn them into soft, fluffy, and delicious banana muffins?
This is one of my favorite recipes because it’s incredibly easy to make, uses simple ingredients, and always fills the house with the most amazing smell. Whether it’s for breakfast, merienda, or a little afternoon treat with coffee, these banana muffins never last long in our home!
Living here in Finland, baking has become one of my favorite ways to make our home feel warm and cozy… especially during the colder months. And honestly, there’s nothing better than enjoying a freshly baked muffin with a hot cup of coffee while watching the world outside.

Ingredients
This recipe makes 12 muffins.
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon (maybe lesser if you’d like milder taste)
- 1/2 teaspoon salt
- 3 bananas (ripe works best)
- 1/2 cup white sugar
- 1/3 cup butter, melted
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
How to Bake Banana Muffins
- Step 1: Sift the flour, baking powder, baking soda, ground cinnamon, salt, white sugar and brown sugar together in a small mixing bowl.
- Step 2: Mash the bananas in a separate bowl, then mix in the melted butter, egg and vanilla extract.
- Step 3: Mix together with the flour mixture until well combined.
- Step 4: Divide the batter into muffin cups or tray.
- Step 5: Bake in preheated oven (175°C) and bake for 20 minutes, or until an inserted toothpick comes out clean.
